Fresh albacore, aka tombo, has a lighter, pinkish-colored flesh in comparison to the darker red of yellowfin and other tuna species. It cooks up white and is the only species that technically can be called 'white tuna'. Caught in the South Pacific, our premium grade albacore offers a clean, mild to moderate flavor, good fat content, and firm texture, and may be enjoyed raw or cooked. The steak-cut portions are ideal for grilling and pan-searing; try them for fish burgers as an alternative to ground fish!
