Produced from 100% A. transmontanus sturgeon (White Sturgeon), Lingotto is a hard pressed caviar bar that can be grated or thinly sliced. Think of it as a sturgeon bottarga which can be used in many of the same ways. Because the moisture of the caviar is removed, the flavor is intensified allowing a little bit to go a long way.
Use a microplane to grate over risotto, pasta, scrambled eggs on toast or thinly slice (can use a truffle slicer) over favorite recipes to add some delicious caviar flavor.
Unopened: up to 6 months. Each bar has an expiration date attached to the package. Can be opened and reused. Recommended to store in a ziploc or a tight air-free container. Like wine, oxidation can change the fresh flavors of the product.
