Sturgeon Species: Acipenser Transmontanus (White Sturgeon or Pacific Sturgeon)
Extracted from the White Sturgeon, a native species of the North American West coast, from Alaska to Southern California. It is one of the longest-living sturgeons, reaching up to one hundred years of age. They may grow to 800kg or 1760 lbs and can be as long as 6m or 19 feet long.
This is a pressed caviar. Somewhat soft in consistency, can be spread on toast or crackers.

Payusnaya is a thick caviar spread that the Russian culture has enjoyed for decades. Originally created by sturgeon fishermen who would collect leftover sturgeon eggs from their day’s catch and remove most of the moisture to create a luxurious spread. No two payusnayas were ever the same!

In 2017, they hired Russian Payusnaya experts to teach them how to make payusnaya using a classic Old World recipe and then adding the unique Calvisius touch. To maintain a consistent smooth and creamy flavor, Calvisius’ Payusnaya is made from 100% White Sturgeon (A. transmontanus). Giving you the same consistent delicious flavor all year round. Because there is no repacking by a third party, you can be assured each tin will produce the same delicious consistent quality Calvisius is known for, year after year.
Unopened: up to a 6 months. Each tin has an expiration date on the bottom. Once opened, is best to consume within 1 week as off flavors may develop. Like a wine, oxidation can change the fresh flavors of the spread.
