Payusnaya is a thick caviar spread that the Russian culture has enjoyed for decades. Originally created by sturgeon fishermen who would use the broken, remaining caviar eggs from their catch and remove most of the moisture to create a luxurious spread which was enjoyed on bread or toast.
Traditionally, Payusnaya would incorporate whatever mixture of sturgeon eggs was available, which would vary the recipe each time it was made. To maintain a consistent smooth and creamy flavor, Calvisius makes their Payusnaya from 100% White Sturgeon (A. transmontanus).
Today, Calvisius has brought this delicious tradition back to life. They hired Russian Payusnaya chefs to teach them the traditional recipe and in late 2018, started offering it to the public. This is a beautiful new way for caviar enthusiasts to discover and enjoy a special past-time!
Best served simply on toast, bread or crackers.
