Cultivated from the A. stellatus sturgeon, a special selection that exhibits bold, rich, complex flavors of the sea. An ancient species indigenous to the Black Sea, Caspian Sea, Azov Sea and in the respective tributaries. Fishing sturgeon is illegal worldwide creating the need for sturgeon farms around the globe.
This is a fresh caviar (not pasteurized).
All Calvisius/Ars Italica caviar is certified “Friend of the Sea” sustainable as well as BRC and IFS ‘high level’.

Bold, rich complex flavors with a touch of hazelnut and iodine. Reminiscent of anchovies. Roe is small and greyish in color. Only 2 or 3 farms in the world successfully cultivate a true Sevruga (A. stellatus) caviar as the sturgeon are sensitive and extremely difficult to grow in captivity. A testament to Calvisius/Ars Italica’s pristine farming conditions. A true Malassol (low salt) caviar.
This caviar’s bold flavor is delicious on blinis, boiled baby potatoes, pasta and anything else you’d like to add the luxury of caviar flavor to! One of our favorite applications is on top of a homemade potato chip with crème fraiche!
Vertically integrated, Calvisius/Ars Italica is one of a handful of caviar producers who not only own their farms but also control packing with the Calvisius brand. Like a fine wine, they oversee production from the beginning to the end, roe to roe. Because there is no repacking by a third party, you can be assured each tin will produce the same delicious consistent quality Calvisius is known for, year after year.
Unopened: up to a 3 months. Each tin has an expiration date on the bottom. Once opened, is best to consume within 24 to 48 hours as off flavors can develop. Can be eaten days later, but like a wine, oxidation will change the fresh flavors of the caviar.
