Alfonsino, also known as Kinmedai in Japan, is an incredibly aesthetic fish, its bright coloring and contrasting flesh make Alfonsino a hugely popular fish in Asia. The fatty texture and distinct flavor makes it one of the most revered options in Japan and around the world.
Please note: Price is based on the whole fish, approx 2 – 2.4 lb each. Choice of how fish is to be prepared does not effect price.
A medium-firm flesh with broad, scalloping flakes. Has a wonderfully sweet, rich taste with lingering umami flavor!
Can be enjoyed raw as sushi or sashimi as well as boundless other applications from baking to poaching in either whole or fillet form. It’s flavor is bold enough to take on vinegars and is well suited for carpaccio.
