If you’re familiar with the quality and flavor of Australia’s Southern Rock lobsters (Jasus edwardsii) then you’re one step ahead! Also known as Spiny Lobsters, these beauties are considered some of the best lobsters in the world! Their remarkable flavor and texture are due to the nutrient-rich, cold, pristine waters of the Southern Ocean. The slow-growing lobster species has a sweet, delicate but firm white flesh, which makes it perfect for any special occasion.
How to Handle: Keep frozen. Thaw overnight in the refrigerator. Prepare within 2 days of thawing. Not suitable for refreezing.
Preparation: You can grill, steam, poach or roast like you would any lobster tail. When we prepared one to taste, we were blown away with how delicious this lobster meat is. We simply melted butter in a sauté pan over medium-high heat and added a little white wine. After a couple minutes, place lobster on it’s back for 2 minutes and then turned over for another 6 minutes with the lid on. Remove and place on a plate. Spoon over some of the juices in the pan. So simple and SO good.
