This Mey Selections award-winning fillet is cut from the prime center section of the salmon tenderloin. Is also known as the ‘Kinglas Fillet’. Hand-cured with a mixture of sea salt and golden sugar then gently smoked over oak shavings from retired whisky casks imparts this loin with a mild, delicate flavor and moist texture. Each 8 oz Mey Fillet arrives unsliced in a perfectly portioned sashimi block giving you the freedom to slice into whatever desired thickness and serve!
Mey Selections is an initiative launched in 2005 by HRH Prince Charles, Duke of Rothesay to foster closer connections between farmers, fine food producers and customers to help maintain a balanced way of life in the Highlands of Scotland. The Mey Selections range is managed by Loch Fyne.

The loin cut is usually served in thicker slices than pre-sliced smoked salmons. Is best enjoyed cut into roughly 1/4″ thick slices. Simply delicious on its own with brown bread or brioche toast, butter and lemon wedges or serve along scrambled eggs.
This product is ready to consume without cooking. Remove from pack 10 minutes before serving to release the full flavor.
