This pasta was created in 1990 by Chef Beppe, renown restaurateur and founder of Tartuflanghe, and is the first ever truffle pasta produced in the world! Two years later the Tartufissima N19 was awarded “Outstanding New Product” at the Fancy Food Summer Show in New York City.
This success is due to its special homemade characteristics: a pasta with an extraordinary texture due to its bronze extrusion and extremely slow-drying production method. The flavor of the truffle is enhanced by the large amount of eggs in this artisan tagliatelle pasta.
In 2012 Tartuflanghe’s Tartufissima pasta was chosen by Oprah Winfrey and included in “Oprah’s favorite things“.

Cooking Tip: This pasta is delicious served simply using the recipe on the box. Bring 2 liters of salted water to boil. Add the pasta and cook for 4 to 5 minutes until “al dente” or still firm. Melt butter (or substitute olive oil) in a separate large skillet. Drain the pasta and add it to the skillet. Toss over medium heat for about one minute. Add grated Parmesan Cheese to taste and serve immediately. Serves 4.
