Game Day Panko & Sesame Salmon Bites

Ingredients

Salmon Bites

14 OZ  Salmon (Ora King) fillets, skin removed
2 Large eggs, whisked
1/2 Cup all-purpose flour
1/2 Teaspoon of smoked paprika
1/2 Teaspoon of salt
1/2 Teaspoon of cracked black pepper
2 Cups of panko breadcrumbs
1 Tablespoon sesame seeds
Canola or Vegetable oil for frying


Chili & Garlic Sour Cream Sauce

1 Cup sour cream
2 Tablespoons sweet chili sauce
2 Teaspoons of Sriracha
1 Garlic clove, finely minced
Lemon wedges, for serving

Instructions

1. Cut the salmon fillets into cubes roughly 1 inch in length.

2. Set yourself up with three medium sized bowls. In the first bowl, place the whisked egg. In the second bowl place the flour, smoked paprika, salt and pepper. In the third bowl, add panko bread crumbs and sesame seeds.

3. Line a baking sheet with baking paper.

4. Dip the salmon cubes into the flour, dust off any excess and then dip into the whisked egg, followed by the panko breadcrumbs. Make sure the salmon bites are completely coated, then place on the lined baking sheet. Repeat with remaining bites.

5. Place enough oil in a large fry pan with sides so the oil comes up about 1/2 inch. When the oil is hot, fry the salmon bites in batches over a medium heat, once golden, turn and fry the other side. Place on a plate lined with paper towels to drain off any oil.

6. In a small bowl, mix together all of the sauce ingredients.

7. Serve warm salmon panko bites alongside sauce and lemon wedges.
