New Zealand Sea Bream is colloquially known as "Tai Snapper" or "New Zealand Snapper" and is beloved in high-end white tablecloth and sushi restaurants.
A responsible seafood choice, it is wild caught on small dayboat longlines and humanely harvested by the Japanese "Ike jime" method, ensuring fish experience very little stress. The result of such careful handling is stunning quality. The beautiful pinkish-white meat has a firm, medium texture, and delicate, mild flavor that holds up well to a variety of preparation methods.
Note: The New Zealand Snapper is not the same breed as the snapper common to the U.S. It is very similar to the highly sought-after Japanese Madai fish.
