Truly one of the most incredible salmon you can experience! Revered by chefs and gourmands around the globe, Ōra King is known for its vibrant red-orange hue and distinct marbling. The naturally high oil content can be seen in the striking marbled fat lines that instantly draw comparison to Wagyu. The sashimi-grade flesh is firm, smooth and silky on the palate, while the taste is uncluttered and clean with buttery succulence. To experience this product in its purest form, we highly recommend enjoying it raw as sashimi, crudo, sushi, etc. However, it also cooks like a dream so feel free to pan sear, roast, grill or poach for equally delicious results!

Sustainability
Ōra King has been perfecting sustainable husbandry practices and breeding expertise for a quarter of a century. Through New Zealand King Salmon's program, they have created a unique breed called Ōra King, genetically distinct from any other King salmon found in New Zealand or the world.
Emulating the lifecycle of wild King salmon from egg to harvest, the salmon are raised in an environment as close to their natural habitat as possible. Fish begin life as eggs, nurtured in Te Waikoropupū Springs -- some of the world’s clearest water. Once hatched, juvenile fish are reared in a constant supply of fresh spring water for one year before being transported to ocean pens in breathtaking Marlborough Sounds to mature in fast flowing sea water.
As a result of their commitment to sustainability and exquisite quality of product, Ōra King has achieved a Green Rating "Best Choice" designation from Monterey Bay Aquarium’s Seafood Watch, and a Best Aquaculture Practices 4 Star Rating, which is the highest BAP standard.
