This exquisite salmon roe comes from Yarra Valley Caviar, Australia's premiere producer of hand milked 100% Australian-cultivated Atlantic salmon roe. The signature burst of flavor and rich and robust characteristics can be used to complement many gourmet dishes or simply on top of your favorite blini or toast point.

Yarra Valley's sustainable growing techniques and ethical fish husbandry practices are world class and backed by BAP (best aquaculture practice) certification built on the four pillars of sustainability: food safety, environmental, social welfare and animal health and welfare.

Located in the Yarra Valley region around 2 hours from Melbourne, these boutique fresh water aquaculture farms are gravity fed by pristine alpine river systems and powered by solar, taking sustainability program right throughout the complete process from hatchery to harvest and beyond. The fish are milked for roe entirely by hand, once per year, under a completely natural anesthetic of clove oil, and are then gently placed back in their ponds to spawn again the following year.

Yarra Valley's products are packaged without the use of any additives. The result is a superb quality fish roe salted with premium salt to produce bright, plump and flawless caviar, bursting with flavor.
