Our Santa Barbara uni comes from the red sea urchin (Strongylocentrotus franciscanus), a long-spined species native to the northeastern Pacific, from Alaska down to Baja California. The waters off Southern California—particularly Santa Barbara—are celebrated for producing some of the finest uni in the world. Each urchin is hand-harvested by skilled divers from lush kelp beds at depths of up to 80 feet. The uni is then carefully extracted, preserving its natural beauty and exquisite form.
