In the sushi world, "akami" is the red meat found on the bluefin loin (versus the fattier portions, otoro and chutoro). "Saku" is the Japanese term to describe a uniformly cut block of skinless, boneless, high-quality seafood. This chef-loved shape makes working in the kitchen easy. At home, slice for sashimi plates, sushi, or other raw platings like crudo. Saku cuts may also be lightly pan seared and sliced--serve with ponzu, on with rice or over salad greens.
