This species of Russian sturgeon (A. gueldenstaedtii) is an ancient one indigenous to the Caspian Sea. You can almost smell the sea in this aromatic, special selection caviar. Only the finest roe is collected for Oscietra Royal after a 12-14 year maturation period which ensures a complex intensity of flavors.
This is a true Malassol (low salt) fresh caviar; not pasteurized. Certified sustainable by "Friend of the Sea" as well as BRC and IFS 'high level' certified.
