Defrosting and Preparation Tip: This sushi item can be portioned in a mostly frozen state with minimal effort with no adverse effect on its quality. Let thaw just barely - enough to rock a very sharp knife through the fish - and portion what you want. Continue to defrost the portion you plan to eat. Whatever portion(s) you don't plan to eat, rewrap tightly in several layers of plastic wrap and store in the coldest part of your freezer.
