Defrosting and Preparation Tip: As you may wish to only eat 4-6 oz at a time, this 12 oz saku can be portioned in a mostly frozen state with no adverse effect on its quality. Let thaw just barely - enough to rock a very sharp knife through the fish - and portion what you want. Continue to defrost the portion you plan to eat. Whatever portion(s) you don't plan to eat, rewrap tightly in several layers of plastic wrap and store in the coldest part of your freezer.
