This Russian sturgeon (A. gueldenstaedtii) is an ancient species indigenous to the Caspian Sea. If produces firm, medium-sized eggs, dark brown in color sometimes with a golden hue. The Oscietra Classic is a feminine caviar with delicate, smooth flavors and a nuanced nuttiness. The finish is complex with just a hint of lingering saltiness. The princess of Oscietras.

This is a true Malassol (low salt) fresh caviar; not pasteurized. Certified sustainable by "Friend of the Sea" as well as BRC and IFS 'high level' certified.

HOW TO SERVE

Best served simply with a small dollop of crŠme fraiche over a blini or small potato and a scoop of Calvisius on top!

SHELF LIFE:

Unopened: up to 3 months. Each tin has an expiration date on the bottom. Once opened, is best to consume within 24 to 48 hours as off flavors can develop. Can be eaten days later, but like a wine, oxidation will change the fresh flavors of the caviar.
