The New Caledonian blue prawn is of sashimi quality and is highly valued for its rich and subtle flavor. A unique, slightly sweet iodized taste with a firm and juicy texture. It's beautiful blue color and original taste are due to the purity of the New Caledonian lagoon water and the natural food supply from the lagoon's plankton. Once cooked, it turns to a beautiful orange-pink hue without any dye. Farmed sustainably, these premium-quality prawns are nurtured in ponds built in natural beds and filled with water from the lagoons. When harvested, these prawns are ultra-fast freezed with brine to preserve all their tasting qualities. GMO free, no antibiotics or artificual coloring is used. Please Note: These 12/14 ct prawns are sold in a 2.2 lb frozen case. Must defrost the whole block at once so as not to tear or break any of the delicate prawns. Is best to keep frozen until a few hours before consuming. To thaw, leave in the refrigerator overnight or for a few hours. Once defrosted, black spots can begin to appear on the prawn which are natural but not attractive. If you plan to defrost and hold a couple days, it is advised to remove the heads as soon as possible as histamines start to release into the body which can affect the sweet flavor of the meat.
