'Saku' is the Japanese term to describe a uniformly cut block of skinless, boneless sashimi-quality seafood. This chef-loved shape makes easy work of sashimi and sushi - simply slice and serve!

Not only are saku cuts ideal for sashimi, sushi, and other raw presentations like crudo, they can be pan seared and sliced for a salad or entrée.

Ōra King Salmon

Flavor: Rich flavor with a desirable fatty texture that's slightly firmer than Atlantic. Origin: New Zealand Method: Farmed / Fresh Note: may contain some pin bones. It is very difficult to remove all of them. Easily removed with tweezers.

Haku Hiramasa (~8oz)

Flavor: Clean, subtly sweet flavor, with a crisp bite and delicate finishOrigin: New Zealand Method: Farmed / Fresh

Tuna - Bluefin Akami (~8oz)

Deep red meat with mild to moderate flavor with soft texture. A stunning option for sashimi and tartare. Origin: Baja California and Spain Method: Farmed / Fresh 

Tuna - Premium AAA Yellowfin (~12 oz)

Flavor: Mild flavor and consistently good, firm texture. Ideal for sashimi, crudo and sushi and poke bowls. Origin: Indonesia and Vietnam Method: Wild / Super Frozen Note: Commonly used by sushi chefs, this premium AAA grade yellowfin is treated with tasteless smoke to promote color retention, individually frozen, and vacuum packed. Product Care / Preparation
Each saku portion are ready to slice and serve! Using a sharp knife and making one pass, slice against the grain. Make each slice around 1/2 inch or thinner.
