Fresh albacore, also known as tombo, is prized for its pale pink flesh—lighter in color than yellowfin and other tuna species. When cooked, it turns white, making it the only tuna species technically recognized as “white tuna.”
Wild-caught in the South Pacific, our premium-grade albacore offers a clean, mild flavor with balanced fat content, firm texture, and excellent versatility. Enjoy it raw in sashimi, sushi, poke, or crudo preparations, or lightly cooked for a moist, meaty bite with subtle sweetness and a clean oceanic flavor.
Our steak-cut portions are especially well suited for grilling or pan-searing and also make an excellent alternative to ground fish for elevated fish burgers.
