Calvisius Tradition Prestige is extracted from A. transmontanus (White Sturgeon), a native species of the North American West coast.
Exhibiting large-sized roe which can take on a translucent color, varying from warm brown to charcoal-gray. Smooth, creamy and slightly fruity with a mild buttery note that lingers on the clean aftertaste. A truly elegant caviar that will even please novices.
This is a fresh caviar (not pasteurized).
All Calvisius Caviar is certified sustainable by "Friend of the Sea" as well as BRC and IFS 'high level' certified.
The fishing of wild sturgeon is illegal worldwide which has created the need for sturgeon farms around the globe. Calvisius has been farming sturgeon for over 30 years and through diligent research and development, is producing some of the finest caviar in the world.
A. transmontanus is one of the longest-living sturgeons, reaching up to one hundred years of age! They may grow to 800 kg (1760 lbs) and can be as long as 6m (19 feet) long. This was the first sturgeon species Calvisius started farming with, therefore garnering the name Tradition. Calvisius was the world's first sustainably certified sturgeon farm and is considered the benchmark for caviar quality and flavor.
