Seafood Bisque

Make this rich and creamy soup with plentiful chunks of cooked crab meat, lobster meat or shrimp -- or a combo of all three! A classic for soup season, or as a starter for any special dinner. Recipe adapted from GreenMount Foods.

 

Ingredients

6 T butter
1/2 Cup chopped mushrooms
1/2 Cup chopped onions
1/2 Cup diced celery
1/2 Cup diced carrot
1 Bag ‘Stock Shop’ Lobster Stock
1/2 Cup half and half
1/4 Cup white wine
1 lb cooked crab meat, lobster meat, or shrimp (or a combo!)
Pinch cayenne
Salt and pepper to taste

Instructions

  1. Melt butter in a large saucepan, add mushroom, onion, celery and carrot.
  2. Cook until tender about 15 mins.
  3. Stir in lobster stock and season with cayenne.
  4. Bring to boil and simmer for 15 mins.
  5. Pour vegetable and broth mixture into a blender, add half of the cooked crab meat, lobster meat or shrimp, cover and blend until smooth.
  6. Return to the saucepan, stir in half & half, white wine, and remaining cooked crab meat, lobster meat or shrimp.
  7. Cook over low heat stirring frequently until thickened about 25 mins.
  8. Season with salt and pepper to taste.

    Serving = 8-10oz each
    Freezes well.
