Cultivated from the A. stellatus, also known as Starry sturgeon, an ancient species indigenous to the Black Sea, Caspian Sea, Azov Sea and in the respective tributaries. This caviar has bold, rich complex flavors with a touch of hazelnut and iodine. Reminiscent of anchovies. The roe is small and greyish in color.
Only two or three farms in the world successfully cultivate a true Sevruga (A. stellatus) caviar as the sturgeon are sensitive and extremely difficult to grow in captivity. A testament to Calvisius/Ars Italica's pristine farming conditions. This is a true Malassol (low salt) Sevruga caviar.
This is a fresh caviar (not pasteurized). All Calvisius stellatus caviar is certified sustainable by "Friend of the Sea" as well as BRC and IFS 'high level' certified.
The fishing of wild sturgeon is illegal worldwide which has created the need for sturgeon farms around the globe. Calvisius has been farming sturgeon for over 30 years and through diligent research and development, is producing some of the finest Sevruga caviar in the world.
