Produced from 100% A. transmontanus sturgeon (White Sturgeon), Lingotto is a hard pressed caviar bar that can be grated or thinly sliced. Think of it as a sturgeon bottarga which can be used in many of the same ways.
Because the moisture of the caviar is removed, the flavor is intensified allowing a little bit to go a long way.
