This flank steak is also known as 'tira de manto'. It's like a thin pork belly, but leaner and with a satisfying chew.

Campo Grande's Bellota Iberico pork is the perfect example of attention to genetics, lifestyle and diet, creating incredibly marbled cuts. Sourced directly from humane family-owned farms in southern Spain that never use antibiotics or hormones.
