Payusnaya is a soft pressed caviar and used as a spread on toast or crackers. Created by Russian sturgeon fishermen over a century or more ago, Payusnaya was enjoyed for decades until sturgeon became overfished. The fishermen would collect the leftover sturgeon eggs from their offerings and remove most of the moisture to create a luxurious spread. No two payusnayas were ever the same!
Today, Calvisius has brought this delicious tradition back to the consumer. In 2017, they hired Russian Payusnaya experts to teach them how to make this delicious spread using the classic Old World recipe and then adding the unique Calvisius touch. To maintain a consistent smooth and creamy flavor, Calvisius' Payusnaya is made from 100% White Sturgeon (A. transmontanus). Giving you the same consistent delicious flavor all year round. This 100% pressed caviar softens into a spreadable consistency when brought to room temperature. Spread on toast, bread or crackers. Can also be emulsified to make elegant caviar sauces or filling.
Unopened: up to 6 months. Each tin has an expiration date on the bottom. Once opened, is best to consume within 1 week as off flavors may develop. Like a wine, oxidation can change the fresh flavors of the spread.
