Tartuflanghe's "Tartufissima" pasta is the first truffle pasta ever produced in the world. This N. 18 truffle tagliolini with 7% truffle is the sister pasta to the tagliatelle version that was created in 1990 by Chef Beppe Montanaro. Tagliolini is a more delicate, small round noodle, smaller in diameter than spaghetti.
The pasta's extraordinary texture is due to its handmade shape, bronze extrusion and extremely slow-drying production method. It has a high percentage of truffle and a great quantity of eggs which enhances the truffle flavor.
Serving suggestions: Toss cooked Truffle Pasta N. 18 with olive, brown butter, or a light white sauce. Enjoy on its own or pair with cooked lobster meat or seared scallops, onions, prosciutto and peas. Prefer red meat with truffle? Serve alongside our NZ AngusPure Ribeye!
