Tartuflanghe's "Tartufissima" pasta is the first truffle pasta ever produced in the world, created in 1990 by Chef Beppe Montanaro.

Tagliatelle (pronounced "tal-ya-TELL-eh") is a long, flat, ribbon-shaped pasta. Part of Tartuflanghe's special pasta selections, this particular tagliatelle marries two of Italy's most precious mushrooms, Porcini and truffle. It is absolutely delicious on its own - simply toss in olive oil or brown butter. It's also exquisite when paired with our AngusPure New Zealand short ribs. The extraordinary texture of this pasta is a result of the handmade shape, bronze extrusion and extremely slow-drying production method. The flavor of the truffle and porcini mushroom is further enhanced by the large number of eggs used in Tartuflanghe's artisanal recipe.

durum wheat semolina, eggs 20%, porcini mushrooms (Boletus edulis and relative group) 7%, summer truffle (Tuber aestivum Vitt.) 3%, flavors.
Product Care / Preparation
Cooking Tip: This pasta is delicious served simply using the recipe on the box. Bring 2 liters of salted water to boil. Add the pasta and cook for 3.5 to 5 minutes until ?al dente? or still firm. Melt butter (or substitute olive oil) in a separate large skillet. Drain the pasta and add it to the skillet. Toss over medium heat for about one minute. Add grated Parmesan Cheese to taste and serve immediately. Serves 4.
