Tartuflanghe's "Tartufissima" pasta is the first truffle pasta ever produced in the world, created in 1990 by Chef Beppe Montanaro. Crafted in Italy, this selection is an exquisite combination of the Langhe region's King of wines, Barolo, and its most famous food, the truffle. The special recipe provides a unique and delicious Northern Italian recipe which is enhanced by the high number of eggs used in making the pasta.
Tagliolini is a more delicate, small round noodle, smaller in diameter than spaghetti. This pasta's extraordinary texture is a result of its bronze extrusion and extremely slow-drying production method. Its truffle and Barolo flavor is delicious on its own and needs nothing more than a simple brown butter or light cream sauce to turn it into a meal. However, we like to go one step further and pair that with seared scallops. Alternatively, try tossing with extra virgin olive oil and top with braised short ribs!
