The new Lumina Supreme Shoulder arrives with bone in and has four different cuts/components to it. The base is the oyster shoulder, with the neck fillet, scrag meat and fore shank left on – one whole primal cut.
Hailing from New Zealand hill and high country, Lumina lamb is 100% natural, free range, grass-fed and finished on specially cultivated chicory and clover forage. The meat itself is finely marbled and offers excellent health attributes, as well as unrivalled tenderness, texture and taste.
Preparation Tip: Lamb shoulders are full of flavor when slowly cooked for hours in a moist environment.
Grass-fed, free range, hormone free and non-GMO, Lumina Lamb doesn’t behave like regular lamb during preparation and cooking, it retains its shape and texture better.
